Take this slowly and note any upcoming large objects near the path (e.g., rocks, trees) as you will need to hide behind those.
Every time he stops, you need to be hiding behind something and wait for him to turn around. A text box will appear above his head when he stops, which is the cue he will turn around soon.
You will have a few seconds before he turns around after stopping and saying something. You can get very close to him.
This NPC has the following indicators:
Wait at the first wall as he will double back to take the left turn.
Then wait at the wall at (X:12.8, Y:25.8) for him to turn and check.
He then takes the stairs at (X:11.5, Y:27.3) and runs to the endpoint.

The creatures can be found grazing on the slopes outside of town. As beef is less readily available, their flesh makes for a good substitute—that of the younger ones especially, as it is more tender and less gamy.
